Butternut Squash soup with Apples and curry
Butternut squash is known to be sweet so adding up a madras curry powder in your soup could be a great idea. The soup would have an earthiness and would be thick enough to be stable inside your spoon. Apple syrup is another requirement for the soup to taste great. Madras curry powder is a more heated than the normal curry powder an can make your soup tastier. Make sure to precook the squash beforehand because it will save your time when you are preparing the soup. You can also roast the butternut squash and keep it frozen for the coming week. Choose a juicy golden tasty apple and mix it with Greek yogurt to make a delicious soup.
Ingredients required for the soup
- 1 tablespoon unsalted butter
- 1 tablespoon olive oil
- 1 medium leek (about 1 cup)
- 1 cup peeled
- Golden Delicious apple
- 1 tablespoon Madras curry powder
- 1/2 cup dry white wine 3 (10-oz.) pkg.
- frozen cooked butternut squash
- 4 cups unsalted chicken stock
- 2 tablespoons pure maple syrup
- 1 1/2 tablespoons apple cider vinegar
- 3/4 teaspoon kosher salt
- 1/2 teaspoon
- black pepper
- 3/4 cup plain
- 2% Greek yogurt
- 2 tablespoons water
- 1/2 Golden Delicious apple
How to prepare it?
Put a large pan on the stove and add butter and oil. Wait till the butter get melted and blends with the oil. Add chopped pieces of Apple and heat it till it gets cooked for about 6 minutes. Add curry powder and continue stirring it for at least 1 minute. Increase a bit of heat and while stirring the mixture add wine so that the mixture gets a thicker form. Add up squash and wait till the blend gets a boil. Reduce the heat of the stove and cook the ingredients for about 8 minutes on low heat so that they get cooked properly.
Take half the squash mixture and blend it well in a blender. Take the other half of the soup now and blend the remaining in the blender. Bring the soup back to the pan and add maple syrup, vinegar and salt to the soup. Mix some yogurt and water in a separate bowl and cut some slices of apple. Use apple and yogurt as an icing on the soup. Your delicious soup is ready to be served. Serve it in bowls and enjoy it for your dinner, lunch or on your snack time.
